And the estate's objective is fine quality without compromise, for olive oil just as it is for wine. We have 10,000 productive olive trees, of the traditional Tuscan varieties: Frantoio, Moraiolo, Leccino (and a few Pendolino and Corregiolo).
The olives are harvested by hand and crushed in our modern plant at a controlled temperature, with almost no break between harvesting and processing in order to best enhance the features of the olives and the oil.
